Wakasagi Nanbanzuke | Japanese Smelt that's crisp fried and marinated in Nanban sauce. The word Nanban uses the kanji characters for "south" and "savage" meaning savages who come from the south. It was used for the first non-Asian foreigners (Portuguese) to land on Japanese soil. Some of the Portuguese foods at the time had more sour notes and also chilis so we believe the name was inspired by their cuisines shared at the time. For what it's worth...thank you for this savagery incredibly delicious sauce! Flavor profiles are sweet, salty, sour, and often spicy. #deliciouslysavage
