Besides just being a pretty looking piece of chocolate there is a lot that has to be done at the plantation before we can start making chocolate. Exhibit A: the process of fermentation. This harvest is a test sample of the fermentation process. It’s being tested to see if fermentation is complete, and it is not yet ready as the seeds are indicating that it needs to be fermented a little longer. This is just one of the many other tasks that are done at the plantation that has ...the knowledge and experience necessary for producing good chocolate. In other words, you gotta have the beans!
