The quality of our chocolate starts with the work in the plantation. Claudio’s culture and training is directly tied to the old masters themselves! I usually don’t lament or regret the present. There are good things in the present and there will be more things in the future but there will not be chocolate masters like Claudio Corallo because the line has been cut to the real tradition and most chocolate makers today are working for acrobatics and impressions. Many of them genuinely care more about what their chocolate wears and looks like it’s a shame because new generations grow up on this kind of philosophy and think that is how chocolate should look and taste.
